Then this recipe is perfect for you. Our Mediterranean focaccia is more than just bread: it brings the southern lifestyle directly to your baking sheet. Ideal for balmy summer evenings, a relaxed aperitif with friends, or as an aromatic accompaniment to rosé.

Ingredients for 1 tray

For the dough:
- 420 ml warm water
- 4 g dry yeast
- 5 g honey
- 10 g sea salt flakes (e.g. from Epic Spice )
- 15 ml rosemary olive oil ( A L'Olivier )
- 500 g flour
For the topping:
- A little basil oil ( A L'Olivier )
- Black olives ( A L'Olivier )
- Dried tomato paste ( A L'Olivier )
- Green Olive Tapenade ( A L'Olivier )
- Pizza Seasoning & Rosemary-Garlic Rub ( Epic Spice )
- Additional sea salt flakes
Step-by-step instructions
1. Mix the pre-dough:
Mix water, yeast, honey, salt & rosemary olive oil.
2. Knead the dough:
Add flour and mix roughly with a wooden spoon. Then stretch and fold with wet hands. Let rest for 10 minutes.
3. Rest & cool:
Stretch and fold again, then rub with a little oil and let rest in the fridge overnight.

4. Shape and let rise: Fold the dough on oiled paper like a burrito, place it on the baking sheet with the smooth side facing up. Cover with the baking sheet and let rise for 2 hours at room temperature.
5. Top & bake:
Brush with basil oil, make indentations, and creatively top with toppings. Bake at 220°C (top/bottom heat) for 25–30 minutes.

Enjoyment tip
Serve lukewarm with a glass of chilled rosé or with antipasti. It tastes delicious the next day, too!
