PSI – a project with a philosophy: In 2007, Peter Sisseck, the star oenologist behind Dominio de Pingus, brought a vision to life with PSI. Together with over 400 small-scale winemakers, he rescues old plots of land, crafting wines there with depth, origin, and finesse. The vinification is carried out carefully and minimally invasively – with a clear focus on the expression of the terroir.

🧠 A name with meaning

PSI – not only the initials of Peter Sisseck, but also a symbol of psychology: It stands for the soul. And that is exactly what is found in every bottle – thoughtful, elegant, and full of personality.

💡 Serving suggestion

Best enjoyed at room temperature, between 16–18 °C. Open an hour before serving – decant if necessary, depending on its development.

🍇 Grape variety & maturation

• Grape variety: 90% Tempranillo (Tinto Fino) / 10% Garnacha Tinta
• Vinification: Fermentation with indigenous yeasts in concrete tanks
• Maturation: 18 months in large oak casks and French oak barriques, which were previously used for Pingus and Flor de Pingus.
• Alcohol content: 14.0% Vol.
• Bottling: unfiltered, unfined
