Il était une fois is rightly considered by the trade press to be one of the most exciting wines of the southern Rhône and is always highly rated.

This wine is made from ancient Grenache vines and is only available in very great years. It is fermented completely in concrete and only matured in used large 3000l wooden barrels. The aromas in the mouth are amazing. You would have expected much more sweetness and heaviness, but quite the opposite. So fine, so delicate, red cherry, sour cherry, the whole thing comes across like a super fine Pomerol. The whole thing ends in a magnificent salty pull in fine cherry, with spicy, concentrated raspberry undertones, showing almost no sweetness, but great freshness. It is the winemaker's favorite wine.
