Dry marinades:
Apply the spice mixture to steak, chicken or fish. Sprinkle the mixture over one side of the meat and massage it into the entire surface of the meat by hand. Repeat this process on all sides. Let sit for at least 1 hour. If you want a more intense flavor, let sit in the refrigerator for up to 12 hours.

Create a glaze from the marinade
A dry marinade can also be made into a glaze. A glaze is a version of basting that is specifically used towards the end of cooking. Mix your favorite seasoning with apple juice and syrup/honey. Then baste your meat at the end of cooking to create a crispy, sticky, golden finish.

Create a grill oil from the dry marinade
A marinade can also be mixed with oil to make your own grill oil. Brush the meat with the oil before and during grilling instead of using the dry rub technique.
