The Mafalde from Pastificio Gentile originate from Gragnano, Italy's "pasta capital." Since the 16th century, this town in Campania has been renowned for its premium, artisanal pasta. Since 1876, the Gentile family business has been producing pasta using traditional methods and proudly bears the "Pasta di Gragnano IGP" seal – a protected geographical indication that guarantees the highest quality.
🌾 Ingredients with History
Only Italian durum wheat of the Senatore Capelli variety is used – an old, high-quality, and particularly flavorful wheat. This creates a dough that is pressed through bronze dies. The result: a velvety, slightly rough surface that perfectly absorbs sauces.
🔥 Gently Dried – With Time and Patience
After shaping, the pasta is slowly dried for up to 42 hours at a maximum of 50 °C. This careful method preserves the flavors, ensures a perfect al dente texture, and makes the pasta particularly digestible.
Mafalde are particularly decorative, long ribbon noodles with a wavy edge, and their shape and texture make them excellent for serving with sauces or pesto.
