A pale yellow gold color with light straw-yellow reflections, a fairly dense and luminous appearance, with fine bubbles. On the nose, mirabelle plum, honey, sour cherry, Tatin apple, stony limestone, and grapefruit. Smooth and fresh on the palate, with a creamy and melted effervescence. Ripe, fleshy, and crisp fruitiness, supported by pomelo acidity, is fresh and finely stitched with limestone minerality, lending fruity resonance and length to the palate. The finish is characterized by a delicate fruitiness and a balanced texture.

Huguenot-Tassin Winery – Tradition and Terroir in the Côte de Bar:

Located in the heart of southern Champagne, more precisely in the charming town of Celles-sur-Ource in the Côte de Bar, lies the Huguenot-Tassin winery. Founded in 1984 by Benoît and Marie-Claire Huguenot, it is now run by their two children, Adeline and Edouard, thus continuing a long family tradition.

The family's winemaking roots, however, go back much further. As early as the beginning of the last century, the Tassin family, from which Marie-Claire comes, pressed grapes from the winegrowers in their small village. Now the fourth generation to produce champagne in Celles-sur-Ource, the Huguenot-Tassin family looks respectfully to its past to shape and enhance the future of champagne. This deep understanding of the tradition and terroir of the Côte de Bar significantly shapes their work.

The Huguenot-Tassin winery is driven by a clear philosophy: the search for sustainable balance. Following this principle, Adeline and Edouard strive to produce Champagnes that are increasingly expressive, refined, and complex. The Côte des Bar in the Aube region differs geologically from the more northern Champagne region. Kimmeridge limestone and marl soils dominate here, lending the wines a distinctive minerality and structure. Huguenot-Tassin is conscious of this precious heritage and works every day to respect this magnificent terroir and bring out its unique characteristics in its champagnes.
