Ingredients for 2-3 servings
- 250 g risotto rice
- 300 g honeynut squash , diced
- 1 onion & 2 garlic cloves , finely chopped
- 2 tbsp Vadouvan French Curry (Epic Spice)
- 800 ml organic chicken bone broth (J. Kinski)
- 100 ml Riesling Kremser Weinberg 2021 (Weingut Türk)
- 100 ml coconut milk 🥥
- 50 g Parmesan , freshly grated
- 1 tbsp butter
- Salt & Pepper
For the topping
- Roasted pecans
- Feta , crumbled
- Pumpkin slices cooked , seasoned & charred

preparation
- Prepare the pumpkin: Dice the honeynut pumpkin, mix it with the vadouvan curry, garlic, a little salt, and olive oil. Roast it on a baking sheet at 190°C for about 20–25 minutes until soft. Then blend it with the coconut milk until smooth.
- Prepare the base: Sauté the onion in butter until translucent. Add the risotto rice and cook briefly.
- Deglaze with Riesling: Deglaze the rice with the Riesling and let it simmer.
- Add the stock: Gradually add the warm chicken stock and simmer while stirring until the rice is creamy but still firm to the bite.
- Stir in pumpkin puree: Towards the end, fold in the creamy pumpkin-coconut puree. Season with salt and pepper.
- Refine: Stir in butter and Parmesan cheese until the risotto is nice and creamy.
- To serve: Top with toasted pecans, crumbled feta, and charred pumpkin slices.
