Herbstküche mit wenig Aufwand: 10 Ideen für mehr Geschmack

Autumn cooking with minimal effort: 10 ideas for more flavor

Autumn makes cooking a real pleasure again. The oven is on more often, soups are back on the table, mushrooms are landing in the pan, and pasta can once again be a little creamier.

But: Even in autumn, we don't have time for a complex recipe every single evening.

That's exactly why we love ingredients that achieve a lot with little effort. A spoonful of pâté turns pasta into a quick dinner, smoked salt gives oven-roasted vegetables a whole new note, and with a good seasoning sauce, Asian noodles are on the table faster than you could order takeout.

Here are 10 simple ideas for your autumn kitchen – not complicated recipes, but little kitchen upgrades that you can easily try out.

What awaits you in this article

1. Is your pesto pasta missing something? Try white balsamic

Pesto, pasta, parmesan – actually, everything is there. And yet, especially with a creamy pesto pasta, a little acidity can really hit the spot.

That's why Silvie likes to add a small dash of white balsamic. Not so much that the pasta tastes like vinegar. Just enough to balance out the savory, herbal aromas.

Try it this way too

For a quick autumn dressing, combine white balsamic with olive oil and drizzle over leaf salad with fried mushrooms, pear, and toasted walnuts.

A product that you’ll eventually reach for, not just for salad.

2. Tandoori cauliflower: oven on, season, done

Cauliflower is one of those vegetables that can suddenly become quite exciting with the right seasoning.

Toss the florets with a little oil and Tandoori Spice from Epic Spice and roast in the oven until the tips are nicely browned. Serve with a dollop of plain yogurt – and you have a quick vegetarian dinner or a side dish that doesn't taste like "forced" vegetables.

And if there's no cauliflower?

Sweet potatoes work just as well. Cut into wedges, season, and off into the oven. Serve with yogurt or a fresh dip.

Our tip: Make a little extra. Tandoori vegetables also taste great cold or lukewarm in a salad the next day.

3. When pasta can handle a little fire: Patè Bomba

The Patè Bomba from I Contadini is one of those jars for days when there isn't much going on in the fridge.

Stir some into a simple tomato sauce or directly into hot pasta – and that quick plate of noodles becomes a fruity, spicy affair.

Still some Bomba left in the jar?

Mixed with a little mayonnaise, it becomes a quick, piquant, spicy dip for baked potatoes, vegetables, or a sandwich.

And because Bomba has real character, it's better to start with a little and work your way up to your desired level of heat.

4. Steamed vegetables don't have to taste boring

Steaming broccoli, carrots, zucchini, or fennel briefly is practical, quick, and healthy. But in terms of taste, there can definitely still be a little something happening afterward.

One of our favorite combinations: sprinkle Veggie Vegan Herb Salt over the warm vegetables and finish with a little rosemary oil.

Sometimes that's all you really need.

Silvie's quick variant

Quickly wilt or steam spinach, season with Veggie Vegan Herb Salt, and add a little lemon oil.

Add a piece of good bread, feta, or an egg – and a quick lunch or dinner is ready.

5. Quick Asian noodles with Tan Tan sauce

Sometimes you just want dinner to be in the bowl quickly.

Cook noodles, add Tan Tan seasoning sauce from J.Kinski, and toss. Pair with briefly fried mushrooms, broccoli, or bok choy and a little spring onion.

The sauce is already creamy and spicy – that's exactly why we like such kitchen shortcuts.

Not just for noodles

Tan Tan also goes well with steamed or fried vegetables. Broccoli, mushrooms, or bok choy, in particular, can be moved in the direction of Asian cuisine in just a few minutes with it.

6. Artichoke pâté: Turning bread into an appetizer in no time

Sometimes you don't need a fancy idea at all. The artichoke pâté from I Contadini tastes exactly as good as you expect: on crispy toasted bread.

Slice bread, toast with a little olive oil, and spread the artichoke pâté on top. Serve with a few olives, cheese, and a glass of wine – and your spontaneous appetizer is ready.

Or pack it in a sandwich

The pâté also works well in a sandwich: for example, with mozzarella, arugula, and roasted vegetables. The artichoke takes on the role of the savory, creamy base, so no additional sauce is needed.

7. Saffron: A few threads, a completely different character

Saffron might not be a classic "just sprinkle on top" spice. Nevertheless, it belongs on this list for us. Because even a small amount can change a very simple dish in terms of taste and appearance.

The classic for autumn is, of course, a creamy saffron risotto. Important: Let the saffron threads soak in a little warm liquid beforehand so they can release their color and aroma.

It doesn't always have to be risotto

Saffron also works wonderfully in a creamy sauce for fish or vegetables, or in a soup. This way, the small jar is worth it even if you don't cook risotto every week.

Good to know: When it comes to saffron, more is not necessarily better. It's better to dose sparingly and give the spice time to unfold its aroma.

8. Smoked salt + oven = a pretty good autumn combination

The Beechwood Smoked Sea Salt should definitely stay in the spice rack after the barbecue season ends.

In autumn, we especially like it on roasted vegetables. Let pumpkin wedges or potatoes turn nicely brown in the oven with olive oil and sprinkle the smoked salt over them as a finish.

The smoky note goes wonderfully with the roasted aromas from the oven – entirely without a grill.

Definitely try it with mushrooms too

Sear button mushrooms or other mushrooms vigorously, place on toasted sourdough bread, and finish with a little smoked salt.

A dollop of crème fraîche or sour cream to go with it – and mushrooms on toast become a pretty good little autumn meal.

9. Lemon-grapefruit fruit vinegar can also do autumn

When you think of lemon-grapefruit fruit vinegar from A L’Olivier, you might first think of a summer salad. We would therefore consciously use it differently in autumn.

For example, with roasted carrots or fennel: roast vegetables in the oven and finish with a little fruit vinegar at the end. The fresh acidity is a nice counterpoint to the sweet roasted aromas.

Also good with fish

With fried or oven-cooked fish, a little lemon-grapefruit fruit vinegar can provide freshness – especially if there are potatoes or a creamy purée on the plate.

This way, a bottle of fruit vinegar definitely doesn't have to disappear to the back of the cupboard after the summer.

10. An autumn sandwich with orange-poppy seed mustard

Finally, an idea for days when absolutely no one wants to cook.

Good bread, cheese, thin pear slices, and "Here Comes the Sun" orange-poppy seed mustard from Pauli. Add some arugula or leaf salad – and a sandwich that tastes significantly more exciting than plain cheese on bread is ready.

The combination of cheese, fruity pear, and mustard fits perfectly into autumn for us.

The mustard also quickly turns into a dressing

Mix some orange-poppy seed mustard with vinegar and olive oil and pour over a lukewarm potato salad or an autumn salad.

This ensures that this jar gets more than just its one big moment in the spotlight.

Small ingredients, many possibilities

For a good autumn meal, you don't need a new recipe every night.

Sometimes pasta and a spoonful of Patè Bomba are enough. A tray of vegetables and the right spice. Or a few mushrooms, bread, and smoked salt.

We at Great Taste especially like ingredients exactly like these: products that don't just sit in the cupboard for a single dish, but provide new ideas again and again.

Perhaps there is a combination among these ten that you haven't tried yet.
