Does mango really go with mozzarella?

The answer: Absolutely! The sweet, slightly tropical fruitiness of the mango contrasts beautifully with the mildly acidic, soft buffalo mozzarella. The recipe: Mango-Mozzarella Towers
Ingredients (for 4 servings)
- 2 ripe mangoes
- 4 balls of buffalo mozzarella
- Approx. 20 fresh basil leaves
- 2 tbsp basil oil
- 1 tbsp mango vinegar
- Sea salt flakes (e.g. from Epic Spice)
- Optional: freshly ground black pepper
- Optional: crispy baguette or grissini
Here's how it's done:

Prepare the mango
Peel the mango and cut the flesh into slices about 5 mm thick.

Cutting mozzarella
Also cut the mozzarella into even slices.

Stacking towers
Layer mango and mozzarella slices alternately on top of each other. Place a basil leaf between each layer.

Refine
Arrange the towers on plates, drizzle with basil oil and mango vinegar, and season with sea salt flakes (and optionally pepper).
